Indian students arriving in the US inherit a food problem that neither restaurants nor meal kits address. They don't want a cuisine — they want the specific, authentic, comforting food they grew up eating, made fresh, without having to plan it. Meanwhile, home cooks in the same neighbourhoods have kitchen capacity, recipes, and no legitimate way to sell.
